Insider here. This gens gimmick is literally delta species from the TCG. Box legends can change their secondary typing freely during move selection. Other Pokemon may sometimes be caught with an alternate type but this cannot be changed.

Koraidon is Dragon/Ground.
Miraidon is Dragon/Flying.
They both have an ability called Change Gear which changes their secondary typing to Fire and Electric respectively.
