I'm sure at least a few of them were rock, but some of them might've not been - Lileep looks like it could've been solo Grass, Amaura could've been solo Ice, Anorth almost seems Bug/Water, etc.
Or an alternative explanation: Some aspect of their biology makes it so Rock type Pokemon are infinitely more likely to become fossils and are thus the most abundant fossils that a small child might end up reasonably obtaining.
