spending money to create a collection of a certain "thing" out of enjoyment of that thing is fun, especially the social aspect of being able to enjoy it with other people
what you can gain out of collecting is always different between collectors, which is what makes it so much fun to begin with
for example, i collect any and all delibird cards. soon i'll be collecting iron bundle cards as well. when i started i just got one of each art, and now i've been collecting variants for cards. this led me to discover the boundaries crossed delibird has SIX fucking variants (normal, reverse, and 1st/2nd/3rd/4th place pokemon league prints).
a lot of the fun of collecting is stuff like that, in my opinion. the story that some cards have, the research that goes into figuring out the collection you want, finding the cards you're looking for, etc.
