Red gets this treatment from the fandom because of nostalgia mostly and the Red fight in G/S/C just kinda stuck
There are a few interpretations of Red I really like, but you also gotta consider all the different canons in Pokemon.

I really like Red's autism probably because I'm autistic myself so I find that cute and I like "edgy" characters anyway so I don't mind those depictions of him
