This is mostly base doff how the trade process isnt really just a "ill take that you take this" deal, in the games thees a big cut-scene thing and even in the anime theres a giant machine used for it. This is likely do to switiching the pokemons trainer ID, registering it as that trainers pokemon now, stuff like that.
But in the trade process it loads the pokeball the pokemon is in with energy similar to evolution energy when analyzing the Pokemon, thus causing an evolution.
It happens to certain pokemon because the evolution is normally unattainable but the pokemon still has the potential to evolve, it just hasn't reached the circumstances to do so.
Pokemon that usually evolve through trade can evolve to their final evolution in the wild or even from a trainer, but its so rare that it almost never happens, but it has happened before (I think in the manga red graveler evolved like this and Blaine was fascinated by it because no trade was involved)
