It's also no different than a fictional monster species looking male while being female, which we've also had plenty of.
The only people who honestly have such issues with such a Pokemon are people who are self-conscious about their own insecurities, and think that having such a Pokemon matters in any way. Getting so bent out of shape over such a creature is asinine and questionable.
Alternatively, said people who hate it are likely just salty that Popplio isn't evolving into something that they got their hopes up for. They got their hopes up, only to have them dashed, and since they can't handle any amount of disappointment, they'll keep being needlessly pissed off.
