2- The Ralts line was created in times immemorial through alchemical means to serve as a servant race. They eventually broke free from their master and went to live hidden in the wilderness. Next to nothing remains of this mythical past, but the elder Gardevoirs and Gallades still keep the stories alive through oral tradition. This explain why many RLP bond so well with human trainers, deep down in their subconscious they're still programmed to be servants.
3- The reason that Gallades and Gardevoirs are so protective of their trainers (outside of the reason mentioned above) is that they subconsciously see their human friends as a piss-weak baby Ralts or Kirlia who needs protection.
