The fire starter is not a chupacabra. It's a rabbit then jackalope then jackalope/goat hybrid. Fire, Fire, Fire/Steel.
The water starter looks like a walking squid, then a swollen octopus, then a swollen krakken with fighting gloves. It was poorly made by James Turner, he can't create good-looking cute Pokemon. Water > Water/Fighting > Water/Fighting.
The grass starter is based on a feathered velociraptor, but instead of feathers it has leaves. Eventually those leaves form some sort of wings, the final evolution resembles Archeopteryx. Grass > Grass > Grass/Flying
