The way your rival's Eevee's evolution is determined in yellow is really neat to me as a subtle difficulty selection. Losing the first fight and skipping or losing the second results in Vaporeon, an easy matchup for Pikachu. Winning the first but losing or skipping the second results in Flareon, a more even matchup for Pikachu, And winning both fights results in Jolteon, a harder matchup for Pikachu. Weaker players get a slightly easier final boss and vice versa. Its also fun in a headcanon sense since you can see your rival making his choice with those fights in mind. Getting cocky and deciding your Pikachu is no threat he goes for Vaporeon. Deciding your Pikachu isn't to be underestimated he goes for Flareon. And deciding the only way he could lose twice is because electric types are overpowered bullshit he goes for Jolteon.
