Start with Sun and Moon then go back to Indigo League and go forwards from there.
Sun and Moon's comfy vibes and quality writing make it a great way to ease yourself back into the anime if you haven't watched it in a while.
You'll exhaust yourself really early on if you try and start with Indigo League. There's a lot of exasperating aspects to that era that you will have a hard time tolerating if the anime hasn't already endeared itself to you. Also the animation from back then is really beginning to show its age which is also hard to stomach for a lot of people just coming back.
