Us humans, living in large societies, have evolved to become very apt at recognising faces and differentiating them. We've become so good at it, in fact, that we see faces in things which don't have any, like random inanimate objects (cars, furniture, trees, clouds, etc.) as a result of pattern recognition.
We are also quite apt at reading the faces of others, to gauge their moods, their intentions, their feelings. As a result, by merely adding a face to something, we can emphasise with it. Look at some video game and cartoon characters—Toads from Super Mario, or any Kirby character. They look barely human at all, lacking noses, ears, and rather resembling mushrooms, blobs, and household objects than human beings. And yet we interpret their facial expressions as though they were a fellow man's.
Lastly, looks often hint at the underlying genetics, and are a marker of good health. Facial symmetry, aesthetic proportions, healthy curvature in women, musculature in men, etc. are all indicative of one's health and fertility. Since those who made poor mate choices were left with unfit offspring and thus left less descendants, we have evolved to recognise such traits in other humans, and to be attracted to them, if subconsciously. A good-looking woman is likely to bear strong and healthy children, and so it would be wise to impregnate and protect her.
