As for brain freeze: it's caused by sudden cold making your blood vessels rapidly expand, but I suspect Ice-types would be more resistant to the effects of sudden temperature change, including that one. So I think they'd be less likely to get brain freeze.

However, I feel like your prose is very purple, which can be distracting and makes everything more complex and detailed than it needs to be. Of course, what counts as purple prose can be a bit subjective, and some people don't even think purple prose is a problem at all. Still, I wanted to bring it up for your consideration.
As for his species: I haven't read other people's guesses, but I'll go with something like
Shellder or Clamperl. He likes the beach, has fond memories of a certain clam, and (seemingly) died by drowning, so a Water-type would be darkly fitting.
