What's more interesting is how the fight goes, what the rules are and how it all works.
I think not only do the Pokémon win but also that not a single one will die. I think any Pokémon could beat a lion in a 1v1 fight. How do you think a regular real-life lion would feel watching a Sunkern change the weather using Sunny Day and then firing a giant energy laser using Solar Beam? Then consider the mentality of the average Wild Pokémon and what they regularly deal with. So with one of every Pokémon vs. 1000000000 lions, things get way crazier. I'd like to see what that fight actually looks like. Imagine all the stronger Pokémon in the front using their strongest damaging Moves on the lions while the weaker Pokémon are safe in the back. The weaker Pokémon could just ignore the fight entirely to go play or watch or whatever or more likely they would help out by using Status Moves like Helping Hand to help the stronger Pokémon kill even more lions.
Also, I don't consider Pokédex Entries to be canon.
