You need to ecounter the pokemon in the grass first to make that species appear in the overworld, which is why no overworld pokemon appeared in the first trailer and prevents spoiling new pokemon in the overworld. How this will work in places like caves I don't know, unless they do that ground shaking thing from BW and ORAS
