Even the fact that all Pokemon have the ability to shrink was somewhat implied in the games for years when you see them faint when being KOed until Arceus confirmed it. Pokemon Snap AND the anime also showed that they have shrinking tech, not a stretch that if things can shrink in that universe, they can also grow.
They clearly grow in the games when you Dynamax and have obvious mass and weight, they come OUT of a giant Pokeball and even have to be captured IN one, why would any of that be necessary if they actually remain the same size but are just projecting light? Hard light might be able to physically interact with things, but generally does not have Godzilla-like mass and weight. The anime makes this even more obvious with Pikachu not being able to handle his new body at first.
It doesn't make sense that a Glaceon canonically has the natural ability to shrink to a size small enough to stand on a soda bottle but even with the assistance of a legendary Pokemon's power can't grow, and instead turns into a living biological hologram machine.
