Other much smaller franchises evolve with the times and try new things, some even change genres entirely if that's what's better moving onwards. Meanwhile we're still playing the same GameBoy games but on modern hardware and except they don't even perform decently now.

You can see it clearly from the average of shapes, color choices, facial features, etc. They basically change philosophies every Gen, and specially when the art director changes (very clearly seen when they changed from Ken Sugimori to James Turner to whoever was in charge for SV).
Philosophy-wise, things have changed too. We used to have more "ambigue monster thing" designs and now we have a lot of "round cartoon with giant eyes to sell plushies", "literal animal with a different color", "human-made inanimate object" and "animal pretending to do a human job". Not saying that Gen 1 never had any of the latter, but it's very clearly more recurrent now.
