Her gym would probably be up in some town insanely high up the tallest mountain she can find in the region and it'd be It's probably not the "multi-type gym" people were thinking of since it'd be all different type Pokemon in a single team but I will post this cringe anyway.
The gym itself would be utterly surreal, she'd put a lot of her own energy and that of her Aegislash and Froslass into turning the gym into a multi-layered fabricated space of altered reality as noted in the posts before of how if Emily HAD to go into a contest, she'd just use her Aegislash's ability to create fabricated realities as it seems Ghost types are able to do to varying degrees to tell a story. Especially since a lot of that energy she and her Pokemon would be exerting won't be used in a battle anyway since she'd be holding back in terms of raw output so her Gym could still be beaten by actually talented Trainers.
