Cause even if she holds back she still has her plethora of combat experience and the multitudes of special moves and move usages at her disposal. Her gym would probably be up in some town insanely high up the tallest mountain she can find in the region and it'd be It's probably not the "multi-type gym" people were thinking of since it'd be all different type Pokemon in a single team but I will post this cringe anyway.
The gym itself would be utterly surreal, she'd put a lot of her own energy and that of her Aegislash and Froslass into turning the gym into a multi-layered fabricated space of altered reality as noted in the posts before of how if Emily HAD to go into a contest, she'd just use her Aegislash's ability to create fabricated realities as it seems Ghost types are able to do to varying degrees to tell a story. Especially since a lot of that energy she and her Pokemon would be exerting won't be used in a battle anyway since she'd be holding back in terms of raw output so her Gym could still be beaten by actually talented Trainers.
