Is there any point whatsoever to grinding to 100, now that all online battles are leveled down to 50, and EVs are so easily obtainable?

By that same token, is it still necessary to get a full 31 IVs instead of 30 or 29, now that those one or two extra points at 100 will literally never be seen?

I'm supposed to make my pokemon super broken by raising all of their stats or only the relevant ones for them? (example: Sp. Attack for Ralts)
I leveled up Ralts and her Sp. Attack still only increased by 1 point.
