It would be odd if they were pure ghost when they keep their solid animal bodies (like guys like Decidueye and A-Marowak), and they possibly just repossessed their mammalian bodies, so they get Normal to suit their situation. As for why there's no Dark anymore, they now cast illusions with their new Ghost powers. Their illusions are described as being "terrifying" (aka Ghost-flavored) unlike the Dark-flavored pure trickery of standard Zorua and Zoroark. There's no reason for them to be Dark anymore now that they're Ghosts.
