What matters is how feasible it is to properly counterplay against the gimmicks without radically changing your team. I think Reborn offers a lot more flexibility than you give it credit for, especially since how in that game you can destroy fields, change them to your liking, use them against the bosses, so on. The bug gym in particular can have her forest burnt down or, with a little bit of grinding, can just be beaten down with sheer power since her pokemon are pretty weak. It's definitely very far from perfect though kek (FUCK gl*tch and underw*ter in particular)
Anyway, every gym boss in Unbound has their own separate gimmick, that cannot be removed unlike in Reborn, so just warning you now. Some are less oppressive and annoying than others (the 3rd, 4th and 6th gyms all have the worst gimmicks in the game, 6th is probably not too bad on lower difficulties though). Also, if you struggled with Shelly in Reborn, I very much recommend keeping the difficulty at 'Difficult' and nowhere near Expert
