So for Gastrodon, you'll want 5 IVs in everything but Attack. You'll want perfect Speed IVs so you can just barely outspeed other Pokemon.
The only exception is for Trick Room teams, where you want your Speed to be as low as possible, so that's when you want 0 Speed IVs.
