Battle Tower is obligatory but it's fairly straight forward. Battle Factory is a huge fan favorite too, and I know someone was able to make a Red hack with it. I've posted in this thread before my idea of turning Gyms into battle faculties, but another concept I really love is Battle Bingo and Battle Sims from XD. Battle Sims are simple, they're premade battles with teams for both you and the opponent, and usually they have puzzle elements in them that you're supposed to solve to beat the battle, or othertimes they're just fun premade battles, they even make for great tutorial battles too. Those would probably be pretty simple to get into a romhack.
Battle Bingo I'm not sure how feasible would be to make, but it would certainly be fun to see, it's a really fun concept that it's a shame it's stuck in one game that's technically not even mainline.
