External pressures will cause slow changes over time, but you are yourself at all times, so you can't really take a step back and see the difference clearly. Kind of like how your mom sees you as a child for years and years until something happens that causes her to reevaluate you in a new light. Your genetics control your starting point and determine how much those pressures cause changes, but time and trauma will alter your personality even if you're highly resistant to change. The game can't really simulate that, but you train EVs by giving them protein, carbos, etc the same way you can train natures with mints or IVs with bottle caps.
