On a system with more power, they can just touch up the current models.

The whole point of 3D models is that you don't have to create new ones from scratch every time. You can just touch them up a bit and you're done.

For Support Pokemon in Pokken, they just took the Gen 6 models and slapped some textures on them.

They're meant to be future-proof.

Pokken uses the Gen 6 models too for Support Pokemon, just with HD textures slapped on.

If you mean like the playable Pokemon, that wouldn't be possible; it'd cost too much and be way too time-consuming to be worth the effort.

At best, they'd do what they did with the support Pokemon in Pokken; take the Gen 6 models and slap HD textures on them.

Why the fuck would they waste their time and money making 700+ new models every gen when they already have perfectly good ones?

Even Pokken uses the Gen 6 models for the Support Pokemon, they just slapped HD textures on them.
