There's not two professors. It's just one.
The two buildings are the professor's lab and the professor's house. The house has a garage, a more personal greenhouse/garden, and is away from the town where nature like the giant fucking tree can overtake it.
The professor's focus is clearly going to be about plants and nature, not "offense and defense". Kukui didn't research the fucking sun and moon. Stop taking the name of the games so literally. That only ever applies to legendaries.
