In the long term, assuming the whole travel and Pokemon trainer thing is as easy as it is in the anime/games and is a sustainable livelihood, I'd do that. No real specific locations in mind if we were going to travel long term, just visiting different towns and experiencing them.
If it's not feasible to travel like that, I'd probably try and find a career and would most likely look into teaching based on my education (Mathematics degree) since I'm sure that's still useful to some degree. Though either way I would try and catch a few more mons, nothing real specific in mind, just whatever happens naturally, and make an effort to travel to certain towns and regions (especially Hoenn at least once) too for holidays with them.
