Unlike Diglett's body and Cubone's face, Type: Null quite clearly has some kind of major connection to the underlying plot of Sun and Moon. The unusual mask that is explicitly stated to inhibit its speed and power, the origins hinting that it was created for a "certain mission", the fact that it is meant to rival legendaries... It all adds up to there being some kind of "unshackled form" for this thing that allows it to use its full power uninhibited. It gaining Protean after losing the mask (which is likely what it gets Battle Armor from) would make the most sense, given its nature as a chimera that's supposed to be capable of making use of the traits of many different Pokemon.
