If anything they're making Ash more calm and quiet, he only gets excited by the things he really likes or when someone starts to talk with him first, it's even more obvious in the Goh episodes since most of the time he's just observing in silence and only gets involved when neccesary.
It's hard to pinpoint his personality but he's less annoying than Naruto in Shippuden and less autistic than Luffy in Shounen terms.
