They're all different, so it would just be like any other Pokemon or Human thus are effected by their environment and teachings. If I had to hazard a guess as to what a human/Pokemon hybrid would look like...I personally like the idea that they have a chance of being either species rather than a full on mix.
Least thematically breaking would just be saying if the offspring is a Human they'd have magical abilities related to the Pokemon (Psychic powers that arise at a young age, fairy powers, fire abilities, electrokinesis, strong Aura potential, etc.) and thus any offspring that human has has a high chance of gaining the same powers, this would be similar to Avery who got his powers from his bloodline all being telekinetic, telepathic, and well psychic. They might have minor physical appearances like hair color or eye color might look something like the Pokemon, but besides that they physically look exactly like a human.
If its a Pokemon offspring, it looks exactly like the Mother/Father species Pokemon and would for the most part look exactly like the base Pokemon. Its only physical changes would be in its eyes and or hair. Powers wise, maybe they might have a natural aptitude for being able to speak like a human/learning how to do so, if the Human had magical abilities that would mesh with the Pokemon (Say Egg Moves) those would be transferred over as normal as well. But aside from that, its just a regular Pokemon.
