Real life poison can have any color. Poison is a category of various different substances that damage organisms but aren't necessarily related to each other. Most poison you will find in your life id what you can buy in the market and it will generally be white because marketing doesn't care about coloring it. Pikmin did it better in that sense.
The other problem that this baseless purple fixations transfered to the Ghost type aswell. Since the only 3 ghosts in first gen where also poison, the color purple got subconsciously associated to ghosts for the whole series. Now we got plenty of purple ghosts. But traditional ghosts in ant other series happen to also be... white.
