I read the Rescue Team webcomic "Abridgestery Dungeon" a while back (mostly--I still haven't read the epilogue). I really liked it! It had nice artwork and characters, and some good comedy along with well-done serious moments. Also, the way it expanded on the original story was cool. I especially liked how the Fugitive Arc was handled. It was my favorite part of the original game, but I think it was even better in the comic, thanks to the extra focus on Kip's emotions and his interactions/talks with Cara.
Having finally experienced the comic for myself, I decided to try drawing the Taco-Bell-loving memelord himself and his faithful partner. I actually drew this 2 weeks ago, just a couple days after getting my drawpad, but I never got around to posting it.

Maybe make the boss invincible until the player maneuvers around and steps on specific tiles in the room (e.g., the boss has an energy shield and the tiles are the switches to disable it), or add environmental hazards (e.g., lava or spikes).
You could also incorporate the story into the fight to make it more special. For example, maybe the boss is an old friend of the partner, so the partner becomes literally paralyzed with anxiety, or their accuracy plummets to suggest they're trying to avoid hurting the boss.
