Noibat's character arc revolves around gitgud, so he'll end up evolving. Alexa having a Noivern won't really mean anything since Sampei had a Frogadier, yet it didn't mean that Ash would never evolve Froakie.
I think Ash will catch a seventh Pokemon who won't evolve, but will be a massive powerhouse like Gible from DP.

She's the least experienced trainer in the group, so fully evolving her starter would show how much she has improved during her time as a trainer.
If it evolves, Serena's Eevee will be an Umbreon or a Sylveon. Umbreon seems likely since (as some Anons have pointed out) it likes to play in the dark. It could also not evolve and end up being Serena's shoulder-mon.
Cosplay Pikachu would cause a meltdown, but it'd make sense. That Pikachu was designed for Serena.
