Some prefer the older style as it has a more spare quality, whereas the remakes can seem a bit sterile or overdone at times.
A number of hacks are available that improve the visuals to be more like GSC, or even alter technical aspects to be more like later generations.
I agree that GF appears to choose a very lazy direction these days, though. Part of it could be put down to business decisions ("milking the cash cow"). Arguably the developers could be doing more to ensure quality games even within these constraints.
