It would probably sacrifice quality for quantity and have many unmemorable filler for the sake of bloating the game to give the impression that there's lots of things to do.
We already get a lot of that in the mainline games, so an open world game would probably greatly increase that aspect.
I still think dense interconnected maps (where the more you explore, the more maps get opened up) with a start, middle, and end to the game is the way to go for the series. It definitely needs to get rid of random encounters and start focusing on world navigation more using pokemon's natural abilities to get around. There are so many creative ways they could go about it but it's always the same crap.
