Examining both of their various dex entries reveal that their mentality still remains mostly intact. upon evolving. Both feel a strong desire to protect their trainers, and both have some sort of psychic foresight that can predict the future to some degree. However, they differ in the way they go about protecting their trainer or those they are close to. Gardevoir mostly uses its psychic power and spatial manipulation to fight/protect, whereas Gallade instead uses its newfound physical prowess with its bladed arms, hence the new Fighting typing. It is definitely questionable why Fairy is dropped in favor of it, however considering both mons were introduced prior to Generation 6, it's easy enough to deduce that it exchanges a lot of its psychic abilities for the increased combat potential.
