I would like to say that I am very excited for this game after seeing all the information. I wont tell you all of it (for various reasons), but here is a bit:
Grookey evolves into Drumape and I forget the final evolutions name. the final is a punk gorilla with a wooden drum. I think it has a mohawk or similar hairstyle.
Sobble evolves into Sizzile and Intelleon. its a spy lizard with a cape-like tail and spy goggles it uses to read thoughts and see basically everything. Water/Psychic. the middle evolution is able to sizzle into water and squeeze through any crack to spy on people. Maybe thats what they mean by "sizzle".
Scorbunny evolves into Raboot and I don't know the last evolution's name. It has the word "hare" in it though. Its essentially a fire fighter rabbit with protection pads and can run super fast. PURE fire type. I think it was supposed to be Fire/Fighting but they made it pure Fire to avoid hate. After all, Grookey is Grass/Dark and Sobble is Water/Psychic, it would make sense for Scorbunny to be fire/fighting.
The Plot is the biggest plot in any pokemon game, and its good. the ending is very sad and 2 characters die. Team Yell is pointless. Leon isn't a villain but he is a faker.
In the post game you can meet Cedric Juniper and he will give you a Unova Starter. there is also A LOT to do in the postgame, new battle places, etc.
Wooloo has a split evolution, one of them being a Wolf in sheep's clothing themed evolution. it's Dark type.
Zacian is steel/flying and Zamazenta is steel/fire. I don't remember Eternadus's type. It looks kind of like a dragon so probably part dragon type.
The game is FUN AS HELL, so don't expect a letdown.
