The right part is the ASCII translation of the bytes on the left. Personal ID is the part you can screw around to change nature and abilities, by adding or subtracting, usually from the leftmost byte. EVs and IVs are there too, but I don't actually know why Essentials adds 5 to them. To have 31s in your IVs though, you'd actually need to put in 36 (24 in hexadecimal, see the bottom left part)
