I think it might have been a deliberate change because caterpie line is basically a tutorial on pokemon evolution for new players and having your first fully evolved pokemon be that ugly fat thing(Venomoth) would not be very encouraging. Meanwhile Butterfree looks cool as fuck, like a mini Mothra. They even gave it a mandible even though real butterflies/moths dont have it
