Even if he catches Mew I feel like he's ingrained deep enough into his Pokemon and Pokedex that he'd want to keep studying them. Hell the kid has a huge resort where he deals with them on a daily basis from feeding, grooming and just having fun which isn't that far off from what Professor Oak does with Ash's Pokemon. He's definitely going down the Professor route.

Remember a Pokemon Master isn't just being the best trainer to him, it's more than that to the point that they left it so open ended they can forever work a goal for him. He's also a bit like Goku in which he'll continue to try and find stronger opponents regardless of beating the visibly public "best trainer".
