For me, funmon soloruns have breathed a new life into playing Pokemon for me, I was so burned out for a while, trying to do challenge runs, nuzlockes, anything to try making things interesting. Doing these funmon runs have been a lot of fun to do, raising your lil' champion from scratch and conquering an entire region with them, adding as much or as littlr difficulty as you want depending on what would be the most fun.
For me, I definitely love doing runs that are just a masochism rollercoaster, but I've also had a lot of fun doing some runs that were less harsh
As for your specific questions, I think there's a special kind of fun in building your funmon's moveset to be the best it can be, you only start with the basics and through the run you get Lego on the moves you need to get through the games, for example I've found out just how useful Rollout and Ice Ball are, even on Pokemon like Seedot and Bergmite
And as far as getting tired of looking at the same Pokemon, that's why I've deliberatly chosen Pokemon that I either have used very rarely, or not at all, I had never used a Luvdisc, Smeargle, Bergmite or Teddiursa before this, but now I've slowly grown to love them all, with Smeargle it was a good help getting to use Alola Photo Club and Refresh, making me grow even closer (pic related is my lovely Golden Gal, champion of Alola)
