Let me point out something as someone who is experienced with romhacking on the 3DS. The 3DS has a line filter thats enabled by default that draws an outline around the Pokemon and all of its detailing. You could turn this off in an emulator if you so choose. In the end you would get detail equivalent to the Sword/Shield model if it was disabled. Google "sun moon no outline filter" if you wish to be educated. From here on out coloration differences are largely attributable to the difference in game engine and lighting.
