You can tell a lot just via archeology, and at least the "main" 3 Olmec sites have been studied extensively. I'm not personally that informed on our current understanding of society and life at those sites or artistic/cultural stuff, but I read a bit of one of Ross Hassig's books on Mesoamerican warfare throughout Mesoamerican history and he noted a lot more info about Olmec Warfare then I thought we'd know just via archeological info.
Granted, I don't know how mucyh of that info is actuallyt accurate vs just him purely extrapolating without much certainity, but given how respected Hassig is in the field I doubt it's not just him pullng shit out of his ass.
