myth/folklore fakemon are my personal specialty and there's quite a lot of ones I've made designs based on that I'd love to see game freak tackle. lake monsters, nue, mandragora, bunyips, etc.
I'm really hoping that if we ever get a mothman Pokemon, it's on the tougher/scarier side of things because I think having Megaten's mothman be the cute one and Pokemon's be the scary one would be way too funny.
As for real organisms, a few more I wanna see: Portuguese man o' war, a ground sloth (fossil maybe?,) a cowbird (dark/flying b/c it's an ass,) shrike (speaking of mean birds,) bladderwort and/or sundew grass types (we have flytrap and pitcher plants, so why not...)
Caecilians were mentioned earlier in the thread but I'm very in favor of one. We already have too many frogs. Underloved amphibian time.
maybe a water/fire cooked lobster that generates steam from its shell? We've had crayfish and shrimp but no lobster iirc.
and I feel like I'm forgetting something, but have we had any sort of sponge? I feel like that's a fairly big gap.
