Nothing of value would be lost if pokemon were all genderless and people could just project what gender they see the pokemon as, especially in cases where a pre evo looks more like a male than the evo, like eevee to one of the girlier eeveelutions or popplio.
They're not even essential for breeding since the games never go so far as to say the male pokemon fucks the female, the egg just magically appears.
