Plus the concept of what an animal is isn't tied to apperance, in real life animal life comes in all shapes and forms including creatures like coral who people think as objects and that is of course not taking into account what is found in the deepest depths of the ocean which is full of animal life that looks at home at an alien film.
It's obvious the people who run Pokémon tap into the concept of what an animal is and apply it to all Pokémon since it's a fictional universe it doesn't have to follow real life. It's a universe where object-like creatures are living creatures and fantastical critters.
