I'm also really interested in the idea that Poison types can survive in incredibly harsh conditions, some literally even evolving FROM those harsh conditions (Muk, Garbodor, Weezing) so my Gym would probably also be a research centre/Poison type reservation, offering educational classes and presentations to the local schools too.
