So they aren't really as connected to other parts of their world in the same way that we are and therefore in the books we never see anyone with a huge daemon like an elephant. But there are no elephants around, they're in England.
Also the books make it clear Lyra's world is really sexist and classist, which the hbo show didn't portray at all. So in the Pokemon world someone's daemon could be a Tyranitar sure! But remember your daemon dies, you die--instantly.
Bigger daemons are bigger targets and smaller daemons could be too easy to kill.
