Necrozma was a creature of ligh, Solgaleo is a creature of light, Lunala is a creature of light. Current base Necrozma lost its light and absorbs Sol/Luna to recover it so its exactly the one who would not have Psychic as type

And no, Psychic-Fire and Psychic-Flying/Fairy for Sol and Luna wouldn't be another option because it's part of the inspiration in alchemy of the mons. The lion eating the sun represents life and metal's purity, the skeleton represents death and decomposition. Solgaleo and Lunala being Psychic-Steel and Psychic-Ghost is perfect.
Now for Necrozma, the only reasonable change is make him pure Rock (because it lacks of light = psychic type and only its prismatic skeleton remains), then Dusk and Dawn forms Rock-Steel and Rock-Ghost (since these forms are still inferior to Necrozma's real form and its light) and then UltraNecrozma would be Rock-Psychic (the crystals are its "skeleton" and the light its "meat", being finally complete after assimilate Nebby's light = psychic type)
