As the recipient you gain the potential to use Pokemon attacks and abilities, but not necessarily the know how to use them. These must all be learned. You must also relearn the ability to speak properly. If the donor body is of a psychic Pokemon, there is no guarantee you'll develop psychic powers. You also gain the downsides to being a Pokemon, such as the physical limitations of your new body, and susceptibility to being caught in a Poke ball.
It's a permanent choice, but also your only one. Do you take it? A lifetime of awkward living and being a lab subject await, but it is living nonetheless. If you do, what Pokemon would you request the body of? Legendaries and overly rare Pokemon are unavailable for this operation.
