When you say Pokémon is too easy, what are you referring to exactly? More importantly how would Pokémon be made more difficult?
If one were to say that trainers should have more Pokémon, an objection could be raised that this is not making the game any harder but merely more tedious and time consuming. The infamous Magikarp fisherman would be an example of this as him having 6 Magikarp as opposed to 1 does not make it any more difficult, merely longer to finish.
If one were to say the trainers should have higher levels, that could again merely be adding to the tedium as it could be seen as just incentivizing grinding further. Perhaps if important battles had their levels scaled up or yours scaled down this may improve the difficulty, but such change would also most likely carry an outcry over those level-caps.
If one were to say the AI needs to be improved, the question now becomes how, as in how would the AI be improved to be more difficult, but not unfair? As the tower/tree and frontier-like facilities are disliked for their perceived unfairness.
Asking for the AI to be able to switch is an idle complaint as the AI is already able to switch, the problem is that in most scenarios the AI does not have good reason to switch.
